Since it’s pancake month and for all the vegans/vegetarians - here’s a vegetarian pancake recipes from @Leake. She says she like to add peanut butter.
- 1 cup of flour
- 2 teaspoons baking soda
- 2 tablespoons oil (sunflower is best but olive oil is good too)
- 1 tablespoon of sweetener (we use agave but sugar or honey is fine)
- 1 cup water or soy milk (we like water because it makes the pancakes fluffier)
- About an eighth of a teaspoon of salt
