If you’ve never made fresh pasta, this is something you absolutely need to do within your lifetime! Once you make fresh pasta you will never want to eat packaged pasta again. For some it seems like a daunting task but it’s really one of the easiest things to do and it is so rewarding. Fresh pasta melts in your mouth like butter. It is so fresh you barely have to chew it. 
Pasta dough is actually pretty tough to screw up and you will impress your friends or loved ones with a truly homemade meal. 
All you need is a basic pasta recipe and basic pasta machine, which run anywhere from $30-$75. This is the one I use: boom!
Basic Pasta Recipe
2 1/2 cup(s) all-purpose flour
1 teaspoon(s) kosher salt
2 large eggs
3 large egg yolks
Semolina, for sprinkling
Dough: Flour a large cutting board. Place 2 cups of the flour and the salt on the board and make a wide well in it. Place the eggs and egg yolks in the well. With a fork, follow the perimeter of the well, bringing in small amounts of flour and continuing all the way around, until gradually most of the flour is absorbed. If necessary, add up to 1/2 cup of the remaining flour.
Divide the dough into two pieces. Put the dough through a pasta machine, folding into halves each time and then reinserting 15 to 20 times, to knead it. Continue until the pasta is paper-thin.
Handcut or tear or cut pasta using pasta machine.
Serve it With:I like to serve my fresh pasta with just butter, evoo and salt however you can serve it however you like. Make a simple red sauce and or throw in some of your favorite summer vegetables or fish like shrimps or scallops.
